sextant po a po 2023 is a natural skin-contact wine from burgundy, france, made from aligote. the wine is focused on place, texture and drinkability rather than effect.

flavor profile amber, crisp, mineral
lemon peel, apple, herbs and chalk with crisp acidity and a fine tannic grip.

grape varieties and region specifics
100% aligoté; about half whole bunch, around 12 days of skin contact and roughly 12 months in used barrel, bottled without added sulphur. this is a direct expression of burgundy and the way sextant works with the vineyard and cellar.

perfect pairings and occasions
pair it with seafood, fried food, charcuterie, goat cheese or vegetable dishes. serve it when you want a bottle with a clear sense of place and enough personality to stay interesting through the meal.

SERVING NOTES
Serve around 12–14°C. If fridge-cold, give it 10–15 minutes outside before pouring.
Give it 20–30 minutes of air; a short decant is useful. Use a large glass to let the skin-contact texture open.
